Defying industry monopolies, this family-run artisanal dairy embodies Denmark’s heritage of quality dairy. In a world dominated by large producers, their regenerative dairy practices and handcrafted cheeses stand out as a beacon of conscious farming. Regularly present at Grønt Marked, they exemplify how small-scale producers can thrive while embracing values of sustainability and craftsmanship. From their distinct goat cheese offerings to holistic grazing methods, they prioritize both animal welfare and exquisite taste.

Kysøko is an organic and pesticide-free farm run by Anders and Susanne. Spanning 17 hectares of land, the farm dedicates 6 hectares solely to fruit production. The story of this beautiful farm goes back generations and has been in the family’s possession as far back as 1797.

Have you ever wondered what goes into running a farm that not only produces organic vegetables but also adheres to principles of non-violent farming?
Join us on a journey to Brinkholm, a Danish farm that’s not just a place of cultivation, but a reflection of its owners’ values, ambitions, and a spiritual connection to the land.

As a small-scale, low-impact regenerative farm, there’s an inevitable synergy then between
Søagergård’s produce; primarily eggs, pork, milk, and honey.
As Marianne explains, “The bees make
nectar from the clover flower, and the clover fields provide nutrition for the cows… and with the
cows eating the taller grasses and the chickens scratching the ground eating insects, they all have
different effects in terms of how they ruminate”.

As he walked me around his farm in Denmark’s Central Zealand, I interviewed Adam to find out about what he does at Planteskolen Evigt Liv.
He told me how he believes in doing things differently in order to contribute to a world where farming follows the cycles of nature, and mitigates the release of greenhouse gases, all the while enhancing the beauty of the landscape and the diversity of our diet.

In this article, I compare the nutritional benefits of organic and regenerative ingredients bought from the Grønt Marked to conventionally produced ingredients purchased in the supermarket. I do so through the lens of a Danish classic: a flæskesteg sandwich.

At Lindegaarden, Ida-Marie is on a mission to reconnect people with nature through farming while regenerating the soil and growing healthy food.
Lindegaardens methods of farming are not just practical ways of producing healthy food, but embodiments of their beliefs, beliefs that they want to share with others.
An ode to the Grønt Marked
By Daiva Saffron Friedmann, March 1st, 2024
I’ve written a poem, as an ode to this market:
From soft to squash,
The escalation of the dirt’s offering,
Hands fosterings,
July Strawberries laughing themselves to tears.
Because we’ll wake up on sundays
following
Matching the seasons,
Becoming practice
Again.

We’ve been living in Copenhagen for almost two years – and volunteering just as long.
For us, the routine of the Sunday market makes it very easy to keep up with the faces we recognise, get to know them even better and meet new volunteers. We’re really looking forward to starting it all over again.

At the heart of our community is the Grønt Marked kitchen. We cook using the best seasonal, local ingredients. But we’re more than just a kitchen – we’re a culinary movement dedicated to transforming the way we think about food.
Our mission is to highlight the beauty and importance of seasonal eating, showcasing how delicious and sustainable meals can be crafted from locally-sourced produce.

Solbjørk, Camille and Ann-Sofie from Orupdal Jordbrug are the driving force behind the regenerative farm that has been a steady presence at Grønt Marked since their start earlier this year. Graduating from the regenerative agriculture school, they set up a field on Solbjørk’s parents’ horse farm just outside of Lejre and transformed the land into their own small-scale farm.
Article: What is a food system?
by Ema Kosova, July 29th 2024
“Beyond the basic steps of production, processing, distribution, and consumption, many other elements shape the food we eat. Take the last chocolate you ate: its path from cacao pod to the perfect square was not a given.”
by Rich Bewley, August 29th 2024
The first night, farmers market organisers from over forty countries met before being promptly whisked to the Vatican for an aperitivo. No expense spared, there was a full offering: entire wheels of parmesan; zucchini flowers; and sparkling wine.

Bruuns Baghaver is a small, family-owned business dedicated to capturing the seasonal flavours of local Danish and Nordic fruits through their handmade preserves. A member of Grønt Marked since 2022, their eye-catching stall is always a joy to see, with its colourful selection of jams, jellies and marmalades based on decades-old family recipes.

The CICERO project is the Citizens & Communities for European Right to quality and local Food. The project is a collaboration between Grønt Marked and four other organizations located in Croatia (Association of Croatian Markets), Italy (Fondazione Campagna Amica), Poland (Fundacja Targ Pietruszkowy), and the Netherlands (Stichting Rotterdamse Oogst).
SLOW FOOD STRAUPE
Seventeen years ago, the Slow Food Straupe Earth Market began as a local women’s initiative in Latvia. Now the only Earth Market in the Baltics, it brings together diverse local producers on the 1st and 3rd Sunday of every month. During our visit to this picturesque market 70 kilometres from Riga, we experienced traditional Latvian dishes cooked over open fire and local specialties from fresh rye bread to quince jams.
Curious to learn more about our trip to Croatia last month as part of the EU-funded CICERO project – an initiative focused on strengthening citizens’ and communities’ right to quality local food across Europe?

FAQ
We believe all farmers should have the possibility to sell at a fair price directly to the consumers – at the same time, consumers should have access to fresh, seasonal, local and healthy food. In this sense, Farmers Market are an important step towards connecting local farmers and end-consumers, cutting out the middleman. Moreover, Farmers Market are places where to build relations – they contribute to creating a transparent food-shopping alternative where human connection and community comes first.
Lokale, sæsonbestemte og bæredygtigt dyrkede grøntsager, frugter, svampe, korn og blomster. Etiske og bæredygtige animalske produkter såsom æg, ost, mælk, kød og pålæg. Håndlavet eddike, spiritus, syltetøj, fermenterede produkter etc. Altsammen lavet på lokale og bæredygtige råvarer. For mere info, kan du tjekke vores retningslinjer..
Please feel free to Se vores retningslinjer her.
Du kan skrive til os eller svinge forbi et af markederne! Vi vil altid gerne møde nye ansigter og diskutere store ideer! Du er også velkommen til at være frivillig på markederne. :-) For mere info, tag et kig på siden for frivillige!
A community made by farmers, volunteers, friends, colleagues and believers – each one ready to support the project and contribute with their skills, enthusiasm and great ideas! Read more about the origin of Grønt Market and the team lige here!
